A.O.P. COTEAUX VAROIS EN PROVENCE

Terroir : arid and stony clay limestone

Grape varieties : 60 % Rolle, 40% Semillon

Tasting : very pale color, floral nose, the mouth is powerful, slight acidity

Food and wine pairings : aperitif, grilled fish

Vinification : night harvest, destemed and crushed, short pellicular maceration, cold stalling

CUVÉE CHABERTS BLANC 2020 – Of a pale lemon green colour, the wine shows a delicate nose, offering blossoms such as acacia flowers, elegant citrus, peachy scents on honey background. The palate is dry, preserving a good fresh feeling led by the moderate acidity that revives the silky texture. Lean, with elegant mouthfeel and balance, displaying peaches and floral notes, it lingers with zesty crisp. A 2020 that is still and might remain so for the next 2- 3 years. For those enjoying fruit development together with the waxy character and density the Semillon after a few years in the bottle, do not hesitate to cellar up to 5-6 years.
Pairing: Scallops carpaccio, with steamed leek and kumquat zests

CUVÉE CHABERTS BLANC 2021 – Pale straw colour, with greenish hues. The nose is intense and airy, with blossomy veil, showing ripe peach, pineapple, and citrus such as citron fruit. The palate is dry and silky, with a pulpy, generous core refreshed by a balanced acidity. The texture is delicate, imprinted with spicy zests, while the blossomy finish intermingles with a nice herbal twist. 2- 3 years for a youthful approach, up to 5- 6 years for a full development.
Pairing: Sea bream ceviche with avocado, lime and peach, coriander, and pink pepper
